INTL 0590 Transforming Food Systems for Sustainability (3) This course provides in-depth knowledge and analysis of how food system transformations can support shifts towards sustainable diets. Using a systems approach, and a combination of in-class and experiential learning, students examine the trade-offs related to sustainable food production and consumption. Students also learn how food systems can be leveraged to promote good nutrition, health, and sustainability.
INTL 0591 Addressing Health Inequities in Latin American Communities (3) This course examines health inequities in Latin American communities, with a focus on Colombia and Latino populations in the U.S. Using an interdisciplinary approach that draws from public health, medicine, dentistry, and other health fields, students analyze and apply frameworks and research to address these disparities. Through experiential learning, students explore the sociocultural, economic, environmental, and political factors contributing to health inequities, while engaging with community organizations, healthcare providers, and community members to develop practical solutions.
INTL 0592 Public Health in the Caribbean (3) This course explores public health history, structure, and current practices in a Small Island Developing State, focusing on the Caribbean region. Students explore major causes of morbidity and mortality, regional and international health collaborations, and assess national programs and donor-supported projects, analyzing their successes and challenges within cultural and economic contexts.
INTL 0690 Migration in the European Context: Challenges for Public Health (3) This course provides a broad spectrum of theoretical knowledge on issues related to migrants' health and the related policies in a European context. In addition, it provides an opportunity for students to be in the field and interact with those who provide health care to newly arrived migrants/refugees at one of the entry points in Greece. Thus, students can build a comprehensive multi-sectorial approach to issues related to migrant/refugee health.
INTL 0692 Food And Mediterranean Culture (3) This course provides in-depth knowledge and analysis of food production and consumption in the Mediterranean region using a food systems approach. Students learn, through a combination of in-class lectures and experiential learning, about the various components of the Mediterranean Diet pattern, its health, economic, social, and environmental considerations, and trade-offs, as well as how to measure its adherence.
